Date, coconut & apricot balls
These deliscious balls are just simplied referred to as date balls in our household. The kids go crazy for them & are often great helpers rolling them into balls, cookies or sausages. Dates are rich in iron & potassium while coconut & oats contain healthy doses of fibre. Pepitas are rich in zinc important for healthy skin & immune system. Just make sure the apricots & coconut are preservative free. So lets get started!
2 cups of organic rolled oats
1 cup of pitted dates
1 cup of organic dried apricots (make sure they are preservative free)
1 cup of organic desiccated coconut
1/4 cup of pepitas
1 tsp of ground cinnamon
1 tbsp of manuka honey
Use food processor to mix all ingredients together until it comes together. Add a little water or extra honey if the mixture is too dry. Roll into balls & store in the fridge for a few weeks. Enjoy!
